Bier Darbyste – Blaugies
The name Darbyste pays reference to John Darby, a temperance preacher whose followers were oddly moved by a “soft drink” they insisted was fig juice. (That old trick ha-ha)
It is a saison made with wheat, fermented with fig juice which pays more than a little homage to Belgian Wit or Blanche in style, bt is a little drier with more flavour and body.
The figs are not overly prevalent in the flavour profile which is more citrusy and dry with typical saison spritz, so be careful where you point that cork when opening.
