Coolship 3 – Burning Sky Brewery
Continuing our journey into spontaneous fermentation, this release is a blend of 1, 2 and 3-year-old beers. We use a traditional turbid mash schedule followed by an extended boil and wild inoculation overnight in our coolship before transferring to barrels for a lengthy fermentation. Oaky, with a pleasing acidity, this beer is unique to our landscape.
