Brut Nebbiolo is a blended of spontaneously fermented wood aged lambic, with fermented Nebbiolo grape must. Inspired by traditional winemaking techniques similar to Italian and Georgian wines, the biological blue Nebbiolo grapes peel and grape pips remain in the beer for 6 to 10 months, after which it is made into a sparkling wine-like dry beer.
